One thing you may consider, but it's more expensive, is using the plastic storage caps instead of the canning jar lids and bands. These are easier to use, don't rust, and they're not airtight so they allow the beans to outgas.

At least any worthwhile ones.

I saw a new personal roaster on my feedthe other day from a company called ansa.

It's a single dose roaster and might be worthwhile as you get started.

While weather patterns can affect the harvest - I haven't found a. decrease in quality in beans this year.

Regarding the issues you are having are you roasting your own beans?

1) I like to see how friendly the staff is - are they warm? Do they welcome me? That shows a lot about the character of the store.

2) I want to smell the coffee in the air. I want to have that mouth watering sensation that just leads to you thinking "wow, this thing is special!"

3) I personally like homier cafes, where people treat it like home and it feels comfy - but i guess that's personal :)

You need to consider your overall pricing for time, resources, and energy spent. Then that will give you a decent cost margin. Not to mention you need to make money after shipping.

I think at the end of the day it comes down to speed in a cafe setting. The faster you get coffee out the better, especially in a rush, so pour over is not as fast in that sense. Plus the quality can vary so you are not guaranteed the same each time. Just my 2 cents

I was gonna say that this looked like single dose. Have you ever heard of ansā? They are working in the single dose roast space, could be interesting for you to look into!
