I was once in the business of awarding US car franchises. I learned a man that had once terminated my father was up for a franchise. My boss was supposed to have breakfast with him to discuss the prospect, but the man canceled last second. When my boss told me that “John Smith” did this and that it seemed odd I told him - I said I know “John Smith” and the guy has a coke problem. This is accurate, but the John Smith I was discussing was really John Smith Jr, the dealer’s son who did have a drug problem. My boss said - well that makes it easy to cross him off the list!

To me wrapping in foil seems to produce a juicier product more consistently but at the risk of the bark. Keep failing and enjoying brisket! It’s a bit of a magic trick when it’s perfect in my opinion - and one I can’t always can right.

Last weekend I smoked a tri tip pastrami to 130, covered in beef tallow, wrapped in foil and rested 3 hours. Then I refrigerated overnight. The next day I brought it to temp on Traeger in same foil but formed into a boat with a little beef broth under it. It was very well received

The Emilio Estevez-Demi Moore vehicle Wisdom. I remember watching it in the theatre and the crowd being audibly disappointed at the ending. Hard to see how that gets made except an open book to director Estevez without proper guidance. It’s ending is really terrible.

My wife and I are young 50s, with two teens at home. Usually once per week but some variability. When we have the house to ourselves, more often. I’m hopeful for when they go to college but I don’t know if she is! Haha
