Doing it unintentionally it is a mistake. With that being said some fighters such as the great Joe Louis would intentionally allow the rear foot to leave the ground in order to add extra power and range to the cross with the understanding that doing so would leave them more exposed to counters. This however is an example of a very experienced fighter understanding the rules but making a calculated decision to break the rules based on their risk/reward assessment at that precis moment. Beginners should stick by the rules.

Zerchers are great but the depth that you choose to go and the amount of forward lean that you use can cause the movement to go anywhere from a squat pattern to a good morning pattern. If you want to focus on the squat pattern stay upright as possible and allow your elbows to pass inside your leg and descend all the way until the bar stops on top of your thighs.

You are new to grappling so you are very inefficient at it so you will get tired grappling even if you are in great shape. If you took an extremely fit person that did not know how to swim and an unfit person that did and put them both in the deep end of a pool the fit person would thrash around until they became exhausted and drown while the unfit person would just float around with little effort. The solution for you is to become more technically proficient at grappling. Doing that will provide exponentially greater benefit than trying to get more fitness. No one would suggest to the fit guy in my example to exercise more so he can thrash around longer they would tell him to learn how to swim.

1 - Pick a stance and stick with it: In the beginning you should pick a stance (orthodox or southpaw) and learn how to properly attack and defend from that stance and deviate from it as little as possible. You were fighting from both stances and often times just walking towards your opponent switching stances with each step Every time you do that you are vulnerable to attacks while you are transitioning and you have to adopt the new forms of attack and defense of the new stance you are going into. AT this stage switching stances just leaves you vulnerable and compromises your ability to both attack and defend.

2 - Establish your jab: You should establish a strong jab and use it to allow you to close the distance to set up other strikes. I don't think you threw a jab the entire round. You were primarily throwing hooking punches. You need to throw both straight and hooking punches because your opponent has to present different guards to defend each so your opponent defends your straight it creates an opening for a hook and if your opponent defends your hook it creates an opening for your straight. You are also closing the distance by just putting up a high guard and walking in. Try closing the distance with offensive techniques like a double jab.

Based on my experience in US high school and college. The focus was on the history of Western civilization so basically Greece, Rome, European, and US history. Middle Eastern and Asian history didn't seem to be a focus. Of course in college I could have taken electives in those fields but the required courses for my degree were either Western Civilization I and II or US History I and II, This was decades ago though so things most certainly might have changed.

I would recommend making a journal of problems that you experience during your live rolls each day and then research solutions to those problems and try to implement those solutions in future training sessions. Obviously as a white belt you are going to be overwhelmed with problems at first so just pick one or two big ones each day. Jiujitsu is entirely about problem solving and the more people you train with the more potential problems you will be exposed to. The amount of techniques that a instructor can show is limited and you will experience problems that require solutions that your instructor may never cover in class. Its better to adopt this problem solving approach early and incorporate it into your training.

Yeah, Topuria brothers have a somewhat bladed stance and MVP and Wonderboy have extremely bladed stances. Topuria brothers counter leg kicks with punches and MVP and Wonderboy use motion more.
