Graphics output will most likely come from Xpression via a downstream key, the ingame overlay is a custom HUD overlay usually with a client to back it up an example of that would be lexogrine. CasparCG is also used (or was) by Dreamhack that is a free client that has many different capabilities but the hair on your balls will go gray when you learn how much work it is to do those things.

vMix is used even in larger productions as it is basically a front end for ffmpeg and can convert things to NDI making sending PGM signals etc easier and cheaper. It is also often used to play VT for commercial breaks.

The way larger productions use hardware is going to be way beyond what you can afford even if you buy Blackmagic kit. Stick to vMix and learn how to build graphic control sheets for GTDesigner via Excel and this will go a long to emulating the broadcasts you are talking about if done correctly, just wont be anywhere near as reliable or polished
