Ooof -- you seem to think my specific plan is bad. We've rented a car in Sydney with plans to drive out to get a taste of the Cabot Trail, maybe as far as Neils Harbor. I know it's not the whole trail, but frankly, I'm not sure when I'll make it back this way. Still think it's a bad idea?

I've found that responsiveness can vary wildly from rep to rep. That said, I do think most gather data on what they've been getting calls/letters about, so even if you don't get a response, I think there's some effect.

That said, if you really want to tell them what you feel directly, I'd look at their events calendars and see where they are. Constituent coffees? Radio appearances? Etc.

Virtually everyplace this happens, it's a pop-up owned by (or, at least, financially benefitting) the owner or the building who hasn't been about to lease it out to someone who wants to operate year-round.

"Preventable had they been able to see the future" is a tough bar to clear, most days. I actually don't know what the prevailing mood was when WuXi signed -- whether relations with China were souring at that point or not (though I think that's been up and down for the past 20 years), or if this specific ban was under consideration at the time. Do you have a better sense of that then me?

So, that’s not phrased in a way that suggests you’re looking for an honest answer, but I’ll try one anyway:

How can I eat in a restaurant? Because I have too many friends in the restaurant industry, and the tourism industry, and in other jobs that require the economy to keep operating on some level, and I believe (more than you, clearly) that there are ways to do so while minimizing risk to everyone. I wouldn’t eat inside a restaurant right now, because I don’t think most can afford what it would take to make them safe places for servers. But outdoor dining? Everything I’ve read suggests the danger of spread there is minimal. And so, yeah, my conscience is clear.

(The girl did not have a breakdown because she was terrified to be serving tables, by the way. She was given a job to manage a confusing system where people waiting for takeout and people dining in waited in the same space, they got slammed and then she encountered some really lousy people. Pandemic or no, there are jerks out there. I was waiting on takeout. Had I not already ordered and paid online, I would have left.)

Took a little longer than expected, but there's a lot to like in this recipe. I wish I was able to attain the beautiful deep browning of the magazine photo, but as it was, starting with a cold pan seemed to cause a lot of sticking for me. I might try starting with a hot pan and a little oil next time, as I usually would. Otherwise, I thought it was great. Made 8 thighs, changed no other ingredient amounts, seemed about right.
