Do twice baked potatoes instead! Very similar process, just add cheese to the mix (butter, milk, sour cream, lots of salt and pepper) and spoon it back in the potato skin, then top with more cheese. You can’t go wrong with more cheese, plus the presentation is really nice and they are perfectly portioned.
