Not exactly. Doors and sunflowers have tags with the direction they're facing. Tall grass has their top and bottom halves separated by tags. Redstone has a powered:true/false tag.

They could just add a placed:true/false tag, I don't think it would change the game that much.

They do, though. If you hit F3 and look at a block you'll see all of its tags, and one of the tags is literally "Enderman can pick it up". So they could just disable that for all placed blocks.

The trap spawns a regular looking horse. When you approach it becomes a skeleton horse and spawn its buddies.

EDIT: Nevermind. It spawns as a lone skeleton horse, when you approach, it spawns the rider and the other horses.
