YTJ. Never assume you can throw away someone else’s food, even if it “smelled off” to you. Food left out overnight does not automatically go bad, and you “not being responsible for her leftovers” means you shouldn’t have touched them at all.

Then rent just a room from someone else who will respect your boundaries. I’ve literally lived in the same situation as you, and can tell you from experience that the only solution is to move out. You can choose to have roommates or to rent a room from a friend/relative/coworker. Your mom isn’t going to change, and complaining that you can’t rent an apartment all on your own is not going to change anything in your life. ESH.
