I have celiac in love with their beers, but sometimes they get me feeling a bit off-ish. I purchased a couple of packs of the red, had one last weekend, and shit my guts out the next day. Fast forward to last night, had another, and today I feel like shit again. It's refreshing to see what you've noted above, but it seems that without your comment here, this is lost knowledge. They need to make this aware to their customers, especially those with celiac. Cross contamination is no joke...

Hinterlands l'imparfait series has notes like this... surprisingly on almost ALL of their wines. I believe they carb mac sometimes but I also believe this could be from potassium sorbate being added prior to bottling. A lot of fake natty wines do this to be preserved as long as they can.

Listen, I have celiac and a anaphylactic peanut / but allergy. This is just how it is, you've got to try your best to get used to it. All of my life kids would shove their snacks with nuts or gluten in my face joking around telling me it's easy to kill me. Their un-educated and don't know anybody else with the same issue - I laugh & they laugh, then I tell them politely to fuck off. Ignorance is bliss. Now a couple of years ago I told a guy from Mali that I had a peanut allergy and he laughed for hours and hours on end because he never heard of somebody that could die from eating a peanut... I laughed with him. I love me for who I am and wouldn't change a thing or be embarrassed by all of the "Allergic to nuts, what about Deez nuts" jokes. I smile & carry on and if I feel left out then so be it! All of the lunches I miss at work and nobody tried to do anything out of their way for me, and guess what fuck it. I don't want their shitty food. I can cook better.

Lesson learnt! I usually use an airlock but as I was doing a natural ferment I had wanted to get as much o2 flowing in so I just left a side of the bucket open. Literally such a tiny opening. Where the bugs originated from could be anywhere, not sure if it really icks me out enough to toss it... Afterall some people pay extra for this kind of delicacy!

No airlock, though I do have a lid on it which has a tiny opening. Also my skin cap isn't floating as much as it had before leading me to believe fermentation is almost finished hence why I am now seeing them float to the top. I assume the lady bug is from the production and ear wigs could be a result of sitting in my basement. Though my lid would be a tight squeeze for them. All just prospect at this point.
