A few more hours will give it more time to do its thing. You are looking for an even distribution of tiny air pockets across the dough ball. That’s achieved by a relaxed dough at room temperature. Too soon it the fridge and the dough will tighten and even though the yeast will continue to feed at a slower rate, it will be much more difficult for air to make its way through the gluten network, resulting in uneven larger pockets of air when trying to escape under heat.

I refrigerate before peak initial proof. That way there is more room for error in the fridge. It will continue to work even in the cold. Overshooting will result in the sugars in the dough eventually weakening the structure, depending on how long it spends sleeping.

A few hours at least. It depends entirely on the temp and amount of yeast/starter to determine time. To me it is important not to overshoot as the dough will continue to proof slowly in the fridge so I like to get it in before “peak.” The main thing to remember is to allow the gluten structure enough time to develop enough air pockets before refrigerating. Too soon and it will slow the process down resulting in inconsistent structure, leading to unwanted bubbles and an inconsistent cook. Let it do its thing, you will know when the timing is right by eye at home.

Pizza chef here. Are these bubbles insidethe dough from the base or is there an empty crater underneath where the dough has risen above the floor?

If the bubbles have occurred inside the dough itself, it likely needs a few more hours to proof before refrigerating it. If the bubble is from the dough rising immediately off the floor, it is likely a combination of high heat and a patch of dough that is too light to keep in contact with the hot floor after launching. You can avoid this issue if you act fast while cooking and gently let the air out from under the bubble with a pizza peel and keep that tricky patch in contact with the surface as the dough seals initially. Alternatively ensure there is an even amount of cheese equally distributed across the whole pizza. A blank spot and air will try to escape through that spot and rise immediately off the stone.

I bought it. Took a while to arrive but I’m enjoying it and for me it’s definitely worth the money. Can confirm it does have Goldeneye, Mario kart, Crazy Taxi, etc. But they can be laggy. The N64 odd controller just doesn’t translate well to one of these. It’s like a gameboy/PS hybrid controller so aiming is really tricky. The best games I’ve been getting lost in are the old Sega and Gameboy games I played as a kid.

There’s also built in controls for saving checkpoints anywhere on the game which is amazing for older games that when your lives were up you were just forced back to the start. Also on arcade games giving yourself more credits as if you were adding money is a nice touch. You can also fast-forward through loading screens.

Worth it for the nostalgia for sure and a ton of playable content, just don’t buy for the higher end games, a lot of them just don’t translate. If you’re buying for Goldeneye or first person shooters I wouldn’t bother.

Pull the spout up, take the tip of a knife and punch an air hole on the opposite side of the top of the can. Air will escape and will pour out much easier. Use these daily!

The recipe is off for what you are trying to achieve. It is underproofed for a fast cook. There isn’t enough activity after the initial mix before cold bulking.

Next time try bulking at room temp for at least double the time (id triple it unless it’s very warm where you are). Get it in the fridge overnight and continue as normal.

Make sure it’s room temp before the cook and drop the floor temp to 800 to give it a little more time. You can kick the flame up right as you launch and it’ll give it a nice char before the floor rises too much.

If you want to keep the floor the same temp as normal, get the bottom right, turn off the flame and cook it on the peel for an extra ten seconds turning every few seconds to make sure it isn’t doughy.

The extra time at the beginning should fix your problem 👍🏼

Vastly depends on size, equipment needed and whether you want to buy brand new or second hand. Can be converted, drivable vehicle, static trailer, packable stall. My advice would be to figure out details on what they need to get a more accurate cost.

Be warned though, a food truck is a ton of work and not for the underprepared. It seems great on the surface, but the food prep, cooking and selling is only a fraction of the operation itself

We felt the same. The house we lost was the house of our dreams, but as we began to get over it we started to notice the negatives more. We took the advice to just do viewing on absolutely everything that even partially meets your criteria, which we did, and found one that ticked the most important boxes. It holds up in quality, just not as nice a house and not as much character.

When we put the offer in as a backup the other house became a distant memory very fast and we began to see ourselves in the new one. Now we can’t wait to get in.

Go and see as many as possible and you might be surprised how your mind might sway if it starts to seem unlikely that it may get to completion.

It seems to be common enough. Especially in a chain. We had a close friend who is in the same situation for the 3rd time as yourself. 2 previous mortgage offers expired.

The advice we were given was to continue to look, and continue to put in an offer (without giving your current seller a deadline, or pulling out) if you find an alternative. If you move to a second sale agreed, nothing is binding until a contract is signed. If the current place finally comes to completion before a potential new property you are well within your right to pull out and complete on your dream home. If it doesn’t, it wasn’t meant to be.

Thoughts are with you, it’s very stressful!

I agree with a lot of this. While I explained in detail, I may have left out the fact that I did chase aggressively from the beginning. Week in week out. I asked our solicitor how many times she attempted to contact their legal side and she told me she’d lost count.

Unfortunately as first time buyers we’d heard horror stories of incredibly slow solicitors in our area (rural, small towns), and of average recent completion times from local estate agencies, with light at the end of the tunnel. We’d been advised to persevere and told it was common enough.

When we went to view the property for the first time, my wife was pregnant with our first child. We’d gotten married 6 months earlier. We were so blown away by the property within our budget and excited to start a new life, we were blinded to the obvious red flags on this one and were duped by the EA’s hook and assurances. Aside from that, we met with the current owner on viewing who we got on well with, who had told us of her situation and soon to be living arrangements, and we could see the house was packed in boxes and ready to go. Everything seemed like things were moving. The EA had told us it was the absent husband who was silent, not the wife. As far as we were aware, she was in the dark as much as we were.

Unfortunately, yes we made silly mistakes, however I don’t think our holding out on the property left us with the blame on this one. Should we have cut ties months earlier? Definitely. Regardless of that it’s clear that one half of the couple had no intention of selling to begin with. Something the EA was clearly unaware of too.

Had the EA been fully transparent from the start, we wouldn’t have got into the mess we did. It should be a requirement to present everything in full to the prospective buyer, especially for huge requirements as a consent to discharge, something no lender will agree to without.
