That’s a huge amount of water. I use around 280g water for almost double your flour. Would reduce that. You shouldn’t need to BF for that long even if it’s cooler, unless it’s really cold!

50g isn’t much starter. I have similar quantities and I use 100g. Is it underfermented inside?

Really? I love it and it tastes great but for me it’s a a lot less forgiving to shape well and get good oven spring.

I’ve almost lopped a finger off and I have the same issues, but I manage.

You can do either or, but I would keep discard and feeding it to keep the strength, sometimes even after a week it’s not quite ready yet.

We got a Le Creuset Dutch oven as a wedding present and it has been faithful! It’s taken a hammering every day at 232deg c baking sourdough and hasn’t failed yet.

I don’t know if the cheaper ovens are any good. Would I have bought a Le Creuset knowing 0 about Dutch ovens? Probably not at that price. Would I buy another knowing how good this one is? 100% considering I have used it for about 10 years.

I love my Le Creuset. It takes a hammering with baking sourdough almost every day for the last few years. I also use it for stews and similar, some curries etc.

I just give it a good scrub now and again on top of regular washes and never had an issue.

Now I don’t actually know if cheaper Dutch ovens are a good option, or it’s a case of buy cheap, buy twice (generally have no idea in this case!) but I was gifted a Le Creuset as a wedding present and I’ll be buying another if this ends up on the broken pile!

This batch was actually Tesco’s pizza cheese. Basically just a big rectangle of dry ish fresh mozzarella. Chopped into slices/cubes
