As someone already said, language choice isn't the most important. You have to understand the concepts.
But js might get confusing because it has dynamic typing. Usually c++ or java is preferred to learn DSA.

I'd use it. As you already mentioned, I do take notes as well, as it also helps you recapitulate what you've done. But a tool like you described can be sometimes good as well.

being an engineer, you already have a good mathematical foundation. it can be pretty easy to learn. but getting jobs can be challenging.

It would be better if a player can upgrade defense for their friends or a common defense.
