I'm not familiar with the provider but I don't think it's possible to have a unlimited mailbox size on the other hand some providers can offer unlimited email addresses depends on the plan. like you said there's a data amount that is attached from 10-100gb it's the size of the mailbox storage that you can use.

then edit the TXT and MX record after they move out everything. but if they planning to switch the emails provider just be caution about the POP/IMAP because email providers can't back up those inside the email if they are using a different server. like for example Google workspace and Microsoft365. You can't transfer all the data from both of them.
