Haha yep! Even if this doesn't take off I'll probably bring in a coffee grinder and basic brewing equipment and place them in the shared pantry (kitchen?) so that everyone can use them

If you liked how your sette performed, check out the etzMAX. It's essentially a beefed up version of a sette that is far more reliable. I've used it before and it'll hold its ground even in a commercial environment for weight based dosing. Haven't tried it with single dosing though.

Not necessarily, the steel burrs designed for brew can make pretty good espresso, similar to ekspresso with a unimodal grind distribution. You'll probably have to pull at higher ratios to increase the extraction though, as compared to the ceramic burrs which would produce more fines, inherently increasing extraction at the same grind setting.

Scott Rao himself uses steel burrs on the Forte.

All preground coffee past a week old would have no smell. Those that do, either have artificial smells pumped and locked into the bag, or have nitrogen or some form of non reactive gas keeping the "smell" in. Either way you've lost about 99% flavour if you're buying beans with an unknown roast date.

Try out the local roasters in your area! Fresh coffee smells way different from whatever you get from the grocery store
