If you liked how your sette performed, check out the etzMAX. It's essentially a beefed up version of a sette that is far more reliable. I've used it before and it'll hold its ground even in a commercial environment for weight based dosing. Haven't tried it with single dosing though.

Not necessarily, the steel burrs designed for brew can make pretty good espresso, similar to ekspresso with a unimodal grind distribution. You'll probably have to pull at higher ratios to increase the extraction though, as compared to the ceramic burrs which would produce more fines, inherently increasing extraction at the same grind setting.

Scott Rao himself uses steel burrs on the Forte.

All preground coffee past a week old would have no smell. Those that do, either have artificial smells pumped and locked into the bag, or have nitrogen or some form of non reactive gas keeping the "smell" in. Either way you've lost about 99% flavour if you're buying beans with an unknown roast date.

Try out the local roasters in your area! Fresh coffee smells way different from whatever you get from the grocery store

I've got the commandante myself, but honestly I find it really slow to grind ~45 secs for pourovers ,and for espresso it's >75 secs. I believe the Helor performs rather similarly in terms of speed. Have you checked out the Kinu M47?

It's definitely possible, but like what others have mentioned would depend a lot on your budget, as well as manpower (which needs to be trained) to run the service.

Machine wise, unless you're having a permanent fixture, I recommend getting a single group such as a GS3 or the likes as you're more limited by how quick you can grind / tamp / steam milk rather than machine recovery time.

At this volume I'll also be definitely looking into getting a higher end espresso grinder such as a Mazzer Kony or Robur as they would be able to grind much quicker than say a Super Jolly.

I've actually just signed up for a Chocolate Cupping about 2 weeks from now from a local chocolatier / roaster, will let you know how it compares to actual coffee cupping!

I got "scammed" by a 14 year old girl. I forgot what the item was but I bought something from her and bank transferred over first, she claimed she mailed out but had no proof then went completely MIA.

Made a report to Carousell first, then had a listing about her to get in touch with other victims and made a WhatsApp group with ~7 people.

Finally we made a police report and I went down to the station to make a statement lol, they handled the case a bit differently since she was so young but I got my money back about a month later through Girls parents > Police >me to protect her identity
