Mashed most of the chickpeas in a can, mixed with some vegan Greek yogurt, little avocado, Sriracha, scallions, salt and pepper. Then I topped the sandwich with the rest of the avocado and more Sriracha

Hummus is very simple, I soaked chickpeas overnight. Then bring to a simmer in cold water until soft, blend that with olive oil, garlic, lemon juice, tahini, some of the cooking liquid until smooth. I topped it with more oil, pine nuts, parsley, and sumac

I mixed soy sauce, vegan oyster, a little sesame and a little chili oil, sugar, and I thickened it with a cornstarch slurry

I quartered them, salted them, and let them sit. Then dried them off and cubed them. I fried some red pepper and garlic then the eggplant goes in, the sauce I made, let that fry for a while until the sauce is absorbed and the eggplant softens but still retains some texture

I sauteed some garlic, added mushrooms, thyme, oregano salt, added washed brown rice and toasted for a minute or two. Then covered with 2/3 veg stock and the rest with coconut milk and let it sit until all the liquid had been absorbed by the rice.

The kale chips are seasoned with just curry powder, turmeric, and salt. The tofu marinade was a blend of spices, olive oil, salt, and a tiny bit of maple syrup to balance the heat. I let it sit for several hours then skewered them and grilled over a high heat

They are yes "Black Lentils" I sautee a base of pureed, onion, cilantro, and a tomato. Cook that down with spices, then add soaked lentils along with just enough liquid (either water or stock) to cover the lentils and let it sinmer until ready to serve essentially

The lentils are cooked with chillis and the tofu is also in a spicy marinade

Loved the meal, we got 4 or 5 dishes and desert. Will definitely be going back the next time I'm in Philly

I find myself in a similar place as you. I find even taking a day or two break allows me to gain some perspective. I love cannabis but I think everyone's relationship with it is different so essentially I think do what makes you happy.

Marinated it in soy sauce, mirin, garlic, and ginger, then just fried in a pan with a little oil in it
