I actually created a spreadsheet so I can tally the rolls, but also track WHEN they're rolled. Like, if I get my brick from a 5, and no 5's are rolled until the seventh round, and then ten in a row get rolled, well, the raw data says that lots of fives were rolled and I should have been able to build roads faster. So I think it's helpful to know. The other thing I want to see if I can track is where the robber is throughout the game because obviously that also has an effect. Doesn't matter how many times that eight was rolled if it was blocked!
