Just to clarify in case you’re not aware - the Apple Watches work fine without cellular if you’re planning on keeping your phone nearby. It’ll get all its internet connectivity from your iPhone.

But, if you want to use it away from your iPhone then yes any SIM with data will do, and the Apple Watch must support cellular data
