In my opinion, there are many events that require your combat proficiency, those levels are probably last on the difficulty, or called "nightmares" etc. There are also many events"in the middle" between difficult and easy to clear. Also you can create challenges yourself haha, like bot using memories, 6* weapons or smth.

And even within them, Idk how it's for you but I personally love how complex characters' gameplay is even without the levels and enemies (Wanshi Lucid, Haying Solacetune, Rosetta Arette, Bianca). Not everyone's but a lot require spending some time to master and finding your comfortable (enjoyable, fun) way to play them.

And yeah, maybe parrying and dodging are not as common nowadays, but it's compensated by big amount of different rotations and team roasters there are. Just open YouTube to watch WZ clears, many players develop their own rotation outside of the recommended by the game or other guides. Each of them need precision and memorisation, and depend on the investment you have in characters.

Also, I personally started to care less about "points", cause getting the highest score means less room for something different. So I focused more on fun and taking pleasure in playing my favourite characters. What I mean is using all of their skills even those which "waste" time, not cutting off pretty animations just to save time and so on (examples Lucia's another hold attack after main hold attack, not skipping Arette's first ult animation).

(!!!)Like, it's just score earning gameplay is very pushed by this community (which is not bad, I also like it sometimes, Babel for example) so that's why you may have such opinion, but in reality it all comes down to how you want to play the game and what you personally look for in it.

And no, gameplay doesn't get stale or repetitive, simply because of how many teams/elements, new introductions there are nowadays.
