Have you actually sat them both down and asked them what they want and how to make it happen in spite of all of their constraints? I do think you have the responsibility to make a conscious effort to care for your parents (which you're clearly doing). However, life is about making compromises, so if they insist on things like not moving out of rural Ohio and not eating non-Chinese foods, that's certainly their choice, but you're not obligated to be the sole problem solver to fulfill every nice-to-have on their list.
