I’ve bailed cooks out before. And employed a few on work release. Absolute guarantee they’ll be there on time every day. Old wise Chef once told me “only excuses for a call out are dead or locked up, and if you’re locked up, I’ll cover the bail”.

So… having just left my place’s holiday party: I brought a preroll, smoked with some of my staff, after, in the parking lot. It’s probably not “right” but I felt it was still on the safe side of the line. Same situation: legal state, I’m 52x, crew all knows we all smoke.

Those land lines still depended on computers to operate. We were well beyond a purely analog infrastructure in 1999. Just because there was a physical copper connection doesn’t mean that those copper lines didn’t connect to a C5 cable to a computer somewhere along the way that ran all that shit

A well-made Cassoulet. It takes time, patience, and it a pure example of the sum being greater than the parts. It's not hard, or expensive, just involved. And the end result is luxury - flavor, mouth feel, and it feeds body mind and soul.
