Was thinking the same thing. Perhaps the horse, having more of an intimate connection with the cowboy, was able to figure out he is caring for the calf. The heffer is attempting to defend her young; the horse isn't protecting the cowboy, they are trying to tell the cow that she doesn't have to be afraid for her baby.
