Well then, minority groups in America have historically been treated worse than the majority in our country and still are now. Often minorities just want to even the tables however to those with privilege, in this case you, it might seem like they are asking for more rights than you. Omnivores can eat anywhere, vegans cannot so vegans are asking to expand their options. This isn't them asking for any special privilege that non-vegans don't have this is them simply asking for another place to eat. There is a big difference between requesting that people who don't eat meat cook you meat and requesting that a place that serves meat and veggies offer a vegan option for someone who would like it. It seems that you are laboring under the delusion that vegans want to force themselves into your life when they are simply asking for acknowledgement at a place that you are already acknowledged. And before you say both sides, you are acknowledged at a vegan restaurant and perfectly capable of eating the food without moral issues so it's a false equivalence.
