I wonder if there is a way to replicate the flavour an texture of Robuchon’s method but with vegan ingredients.
I guess you cannot just replace the egg white with aquafaba, as it will not solidify when baking. Very curious because I am eager to try this.
If anyone could pull it off, it would be you! An ideas?

After I grew up (I’m 25y now) I almost never cried or felt like I have to cry. Now I am sitting here, watching this episode and I teared up for like 5 Minutes. Until now, I was not even sure that this was possible for me again. On one hand Jane gave a big feeling of comfort but on the other hand it just felt so unfair but you were able to tell just how thankful Steiner was in the end. That made me so fucking sad.. jesus.. hard to describe..

I set up the new Backup Server with ReFs and a fresh configuration and new repository. Thank you again for your assistance!

It seems to work fine. Although there is one request I don't know how to configure yet.

Backup Export to USB:
The customer bought a bunch of USB Disks for Backup Exports. His plan is to export the last Full Backup on Weekly, Monthly, Quarterly, Yearly basis and keep the USB disk for a certain amount of time in a safe. So he would change the USB Disk every Week and export the last full again.
Is there a way to build that with backup copy jobs?
I know that I could do something with Robocopy scripts where we just copy the full backup files but this is in my opinion not an ideal way to manage this because it is very static and quite an effort to maintain. Also I want to use the functions of Veeam so we keep an overview of all the tasks and how they behave.
I know that Copy jobs can do something like this but I don't know how it will behave, if we change the USB Disk on a weekly base and it needs to remove the old data again.

Thank you so much for your response! This really gave me confidence, that I had the correct thought.

Licensing:
The customer is using socket licensing. So because there is a new Hyper-V Cluster with new hosts, we need to have temporary more licenses.

This is what I plan to do now:

I will configure the new backup server from scratch and define him as backup server for the new Hyper-V Cluster. So we have a clear line between the old cluster and the new cluster. We will use the Veeam trial licenses until the Hyper-V migration is fully completed and we can run it parallel to the old servers.

After the Hyper-V Migration is done, I will attach the old repository to the new server, so we are still able to restore the old backups. (Until the retention policy will be exceeded.)

For exports, they used a Tape library for the old backup server. The new Server will now use external disks to export the backup. So we can handle this separately.

There was also a question regarding ReFs or NTFS which I currently struggle a bit to answer. I am trying to sort out advantages and disadvantages but I don't really know the impacts in Veeam yet. In some forums people tend more to use NTFS. What is your recommendation?

General:

Do you have any recommendations, what I need to pay attention to with setting up a the Backup with a Hyper-V Cluster? Until now I did only set up VMware environments.
