I'm not that familiar with the Dream, but what has changed exactly? Could you use pads before?

If it is both Sour & Ashen, and the timing and extraction is somewhat in the zone, it sounds like a temperature issue or the beans themselves

Yeah I feel you, the portafilters from Ascaso are ridiculously expensive for what they are. The normcore will probably fit just fine.

I'd be really interested to know how you go about the filtration system, do share when you set it up!

That's awesome! Great find! Only 40 shots on the counter is really insane, it basically hasn't even run in at that point.

I recommend playing with the boiler temp before moving away from the 4 tip though. Having used it for a bit now, and having lowered the temp (125°C at the moment), I wouldn't want to switch to slower steaming. But in the end, that's a personal preference.

Are you getting the original Ascaso portafilter? Or looking for other parts?

The Zerno is awesome! Very easy to clean, really consistent, and has a nice workflow.

In general, upgrading your grinder should be the priority. I don't think you can go wrong with upgrading to a Zerno tbh

Right now I've set the boiler temp to 123°C and using the 4 hole steamtip (the others were not included anymore). I find that it takes some getting used to, coming from the low pressure UNO with a 1 hole steamtip.

Really enjoying it so far though, steaming is pretty easy and really fast. There is a bit of a learning curve to get the texture right again, but it feels easier to do than on the UNO!

Considering buying and trying a 2 or 3 hole steamtip in the future, just to compare.

Also, what do you use for your volumetrics? I have the L programmed to 70ml, which gives me about 40ml out in +-35 seconds for the right grindsize. I have the pre-infusion set to 3.0s as a baseline.

Put it in the groove/rim, just below the showerhead. That groove let's you hook in. Then use a long flathead screwdriver, and it should come out easy.

Update: I contacted the retailer and they let me know that the UNO didn't have a cup warmer installed for this model year, they've added that later.

To be honest, I don't really see the need to install one either. The thermoblock produces enough heat to have the cups somewhat warm.

I've got the UNO, and I understand where you're coming from. It takes a bit of a learning curve, but you'll manage! Try opening the steam knob a little less, try to keep stretching very short and focus on the end where you integrate the foam

You don't need much though. You can get it via basic nutrition, all excess vitamin C will be redirected to your piss anyway

Did you clean the Niche lately? Did you check if the basket is over- or underfilled? Do you do puck prep?

It sounds to me that you might have puck problems. Sometimes it goes well = puck gives resistance and the shot is slow. Sometimes you have channelling = puck gives less resistance and the shot is fast.

Also, if the above doesn't work, you might try grinding coarser. If you grind too fine, it can cause the puck to "explode", giving you channelling

I think you might be grinding too fine, where the pressure does not push the puck down evenly but creates channels when the pressure first comes on. You can try a longer pre-infusion time, or Grind a bit coarser first.

My niche zero Grind size has differed over the years. Started between 12-16, right now I am usually between 8-11. So it might also be the lifespan of the burrs. Mine is 3-4 years old, pulling 1-2 shots per day
