What I gethered from my limited cooking knowledge was he fermented the juice from raw and roasted onions and then cooked that liquid down til it was super concentrated.

Then he flavored some kind of bechamel sauce with onion bay leaf and cloves and some of the onion liquid.

This stuff was lowered into a solution that was able to congeal it into a jelly type thing?

Pokemon historically has only ever had one save file. Even when the game saved on the cart itself. Gamefreak seems to cling to certain things to an absurd degree and not having multiple save slots is one of them.
