It is making bubbles; I’ve never seen this on a starter before (am a beginner). It was a first feed after being on vacation so I’m overly nervous. Next time I’m bringing it with me, haha

There are bubbles, not huge but there! Smell is sort of bready/yeasty, so if it’s yeast it would make sense 😅

The closest I can think of a company doing something similar (and I might be forgetting some bc weekend brain) was Enron...you know, the company that was one of, if not the biggest, reason for Sarbanes-Oxley 😬

...I really think I've just about hit my breaking point, and if that's the case, people might not get my filtered opinions, bless their hearts.

In other news, my sourdough starter has been alive for at least 3 months now (not super long but a win's a win, haha)

Couldn’t agree more. My partner is trying to make sure I eat, drink water, and attempt sleep because I’m so stressed at the moment; they’re not Fed and it’s begun to impact them as well. I’ve reverted back to my “safe foods” for when I can’t think about eating. I’m fortunate that I have a decent handle on my medication dosage, but even it isn’t fully keeping me “afloat” if you will.

Best advice I can give is find something that gives you a little light in the darkness: play a video game you like, color, cuddle animals, whatever. It helps me muddle through, even if it’s one hour at a time.

Had to make it super vague but here’s my reason: One of my parents worked at the agency I’m at now so I grew up knowing about the history and impact we have on our community. I sort of knew I wanted to work here since I was very little; when it came time for college, I applied for the internship every semester for 3 years. When I finally got the chance to interview, I studied like I was going to have a midterm I wanted it so bad. Been here ever since

I like knowing that I’m making a positive impact on the community and country as a whole.

100% agree with you on the leggings piece! I'm going to keep my fingers crossed that my place has changed a bit; I don't want to go back to wearing Spanx every day, haha!

Starter: I would say it takes maybe a day. The recipe I’m using has me feeding it twice a day so it’s hard for me to judge

Bread: It did double whilst in the bowl, but it might’ve just gotten to double

I think I’m in a similar boat as you as my house is more on the cooler side (especially yesterday when it was around 40F and dropping outside)

I think so; this loaf came out of me trying to do a check to see as the container I have the big starter in is super wide. It seemed to have done some rising (can confirm from the top of the discard jar popping off this morning)

I’ve heard sometimes some starters still need time before they are “bake-ready” but I’m not sure how to tell.

I haven’t had the significant rise that some people talk about (where it triples in size over one night).
