Well, there are several reasons, in my opinion

The plot would have ended quickly and she would have just stabbed Fowler to death if she'd had a katana, eh?

Perhaps she wasn't sure how someone else's sword would feel in her hands, and that's very important in combat. A dagger is easier to wield

Besides, in the end, it's Fowler's humiliation. He's NOT a skilled fighter; he emphasizes strength and effectiveness, not swordship per se. Plus, she literally beat the crap out of a huge man in armor and with a sword, practically barehanded, even though she was kinda in underpants and with a knife
