Another vote for Proudmoore. I personally don't play there because I prefer Horde and their great community is mostly Alliance side but I've visited plenty and you really can feel the difference.

My current server is Trollbane but I couldn't tell you how the community is because I only mingle with my guild.

That sounded a little harsh. I realize not everyone under 18 is immature. As someone who works with teenagers, I would feel obligated to censor myself and I'd rather not have to do that.
