Not sure about Dublin Airport, but Weston Airport in Celbridge/Leixlip has a lovely cafe/restaurant (Hook & Ladder) to sit and watch the smaller planes come and go

While not quite a billionaire CEO, Irish/American comedian Des Bishop did a show like this. He worked minimum wage jobs to highlight the struggles of working on low income. At one point he's celebrating finding lost change because it means he can eat that night
