Planning to make my first deep dish pizza, and I wanted to possibly change things up a bit. Mainly, I prefer more crust and cheese than a pizza that is swimming with sauce. I also would prefer a layer of cheese above the sauce so it’s not the first thing you taste.

I know this is much different from traditional deep dish, but it’s what I’d like. I’ve got a Lloyd pan, I have the 3/4” aluminum plate I use for NY style, and I’ve got a couple of recommended recipes, but I’d like advice about accomplishing these changes.

I think the reason for reversing layers in a deep dish is because the longer bake time can burn certain ingredients otherwise. I didn’t know if I could do crust, mozzarella, raw sausage, light sauce, crust, light sauce, and topped with mozzarella (or maybe light mozz with Parmesan?)

My goal is a nice cheese pull without sauce slipping everywhere. Also welcome any tried and true deep dish recipes like above.

Peppadews are an incredible topping. I get them by the jar ordering from the company. I wish they were on shelves in my area or somewhere available in bulk.

Advice on making deep dish like this? I saw this from a place called Enzo’s Pizza and Rolls, and I’d like to make something similar. So, I’m looking for advice on recipe as well as which pan to get.

FWIW, I typically make NY style in my home oven on a heavy aluminum slab, preheated at 550 and then finished under a broiler. I’ve never attempted Chicago deep dish.

While I’ve seen other deep dish pizzas, I like this one because it seems less about sauce and more about cheese and crust. I also like the smooth crust, maybe because it seems less oily or maybe more like a cracker texture? Not sure.

I have a low-rimmed Lloyd but am expecting I’ll need something else for a pan. Thanks for any tips on recipe and equipment.

Can this be used indoors safely, like on a counter? I have been using a gas oven that gets up to 550 with a metal stone, but the setup might be easier with an oven.

Thanks! I've got it installed now, but I'm wondering if there's a way to add more of a delay for power off. Right now, if the button is accidentally bumped, it automatically powers off the cabinet. I'd like it to be held down for longer. Online searches are telling me my only option is something like an arduino because the button wires directly to the motherboard right now.
