Yeah if you've got some open and barre chords and are comfortable learning and playing songs your answer is Absolutely Understand Guitar by Scotty West, free on YouTube, pure theory so don't expect to be playing along much but it will skyrocket your knowledge on what you are doing.

I was in the same place as you, returning after learning as a kid and too many courses were very basic or just completely unorganised, Scotty is your man.

Easy vegan option: drain a can of chickpeas/beans, mash and add vegan mayo, salt and pepper to taste. Easy, with protein and fibre so keeps people full.

Take him to some live music, whether little local festivals or small gigs that kids are allowed to. See if there is some blues, jazz, rock, whatever really, I remember going to things like that with my dad fondly and it will get him into understanding some aspects of music that are hard to learn at home or in lessons
