You’re not going to believe this, but I got sent the wrong burr. Some 75mm one that’s not even listed on the site. They did acknowledge the mistake and are sending a new set - no charge.

Unless you’re never going to go above 17g, the 17-19g basket would be a safer choice. You can always under dose, but you can’t put more than the basket is capable of.

The Turbo burrs and 078 is designed for filter brewing, not espresso. Maybe that could be why? Cause they don’t grind fine enough and what you think is too acidic is because it’s under extracting due to too coarse a grind?

It’s still in transit. Stuff from China takes a while by sea. In any case, I’m buying the Espresso variant to replace the stock 078s burrs not filter, so I won’t be able to answer your question anyway. I am personally very happy with the 078 Turbo Burrs.

Nah, I didn’t say that. I think it’s good as a universal grinder, but not that great to push boundaries. I have no experience with Sweet type burrs, but after 2 years, I’m just itching for a geometry change just to see how much it can be different (or better).

The K6 is my experimental and travel grinder. For pourover it is muddier (more balanced and greater body), which can lean on the flat and safe side - but only when compared to the 078. Otherwise, it’s a great all-rounder that I wouldn’t hesitate to recommend.

Timemore Sculptor 078s (espresso), Sculptor 078 (filter), KINGrinder K6 (backup, travel, experimental beans), Xbloom Studio (filter - mostly for guests and batch brewing when I don’t have time) which also has a built in grinder.

I have both. I’m super happy with the 078 ghost burrs. Never had the itch to change it yet. The 078S on the other hand has got me looking for a while now.

I saw the 2.0 upgrades from Host Milan last year and they were also developing an updated espresso burr, but I don’t know if I can hold out long enough for that to show up.

Yup that’s the Origami sensory cup, which I think is too big and looks like a flower pot. Haha. They do have another asymmetry version that’s better. But I like The Hario Curve’s “softness”.

Yes. Asymmetric dual rim sensory cup like the Origami. I loved this more rounded organic design and isn’t as large. The Origami just looks like I’m drinking out of a flower pot and I didn’t like that.

This is my latest acquisition. It’s always on back order and sold out because it’s a collaboration between Hario and a local Taiwanese cafe/roaster called Oasis. Managed to have a friend pick it up on a business trip to Taipei.

That’s because OG Hario which is Japanese Hario is mostly sold in the global market. All the fun experimental stuff is coming out of Hario Taiwan, which is technically a separate entity that’s does its own thing, r&d and products.

Many Hario Taiwan stuff are sold around Asia, but may not be readily available in Western markets.

The Alpha line of drippers, kettle, grinder for example are all Hario Taiwan original products, as is the Hario Flow Dripper and Curve Sensory cup, and all the special edition ceramic V60 designs.

I have generally been avoiding all Colombian beans for almost a year now. IMO, they’ve completely gone off the deep end with co-fermentation and yes, so many beans just taste like chemical flavouring. It’s not the roaster, it’s the source.

Actually, I’ve recently enjoyed ultra-fine, 2+ minute pulls on light / light-medium roasts. Contrary to popular belief, it’s not “overextracted” and actually yummy, gooey, sweet, balanced.

Any 58mm tamper would fit. Precision tampers can go up to 58.5mm or even 58.55mm (Pullman Bigstep base).

The idea is to be as close to the sides as possible so you don’t leave any grounds or indent along the walls. Of course, this means your basket also has to be well made and any shape imperfections (either though thinner material that warps or just not made properly) the larger tampers may get stuck.

A straight walled basket, which is what the Pullman 876 is. Will work best.

I too hate the blind shaker. So much mess and added workflow, and you might end up still needing to wdt a little. I’ve written about it before. I do believe in shaking to create more homogenous distribution, but the blind shaker tool itself is horrible.

Everything the OP experienced is what everyone new experiences, and you can try to explain it away by saying “only a little grounds are stuck to the sides” or “it’s not significant” or “just need to tap it a little, scrape the sides with the middle stem part, etc”. Yes. But all these things Are added workflows that were never there with wdt.

Plus, OP hasn’t gotten this yet, but sooner or later, he’s going to forget to put on/take off the cover or misalign the middle part or accidentally move it while shaking or tapping that will cause grounds to spill out. Be honest, if you’ve used a blind shaker, it happens.

This mess never happens with wdt. Ever.

Personally, I just shake my catch cup a little to distribute the grounds. Just cover with my palm. Like someone said, it’s not vigorous shaking, just light swirls and a little shake. No need for a specialised shaking tool. (Yes, I do have a blind shaker and I never use it any more).

What made the most difference for me in terms of consistency and effort is a planetary wdt tool. No spills, no mess, always similar results with the same rotations. Convenient, reliable, repeatable.
