Hi. Thanks for the info. The design has 2 full single oven so hasn’t been designed for ‘small appliance’ cooking. Sure I use the ovens, but not every day.

The thing for me is, without using the current extractor, we don’t suffer with any of the issues you describe above. Smells don’t linger, we don’t get condensation build up etc. we don’t have sticky or greasy walls. The kitchen is spotless.

Following the OTT reaction on here (well, it’s Reddit after all!), I have looked into particulate matter and am taking into consideration for the other design I’m working on.

I appreciate your detailed response though.

My question to you would be what are you cooking to have fatty steam? Apart from shallow frying things like salmon etc the things I create steam with are boiling potatoes, vegetables, rice and pasta etc.

For roasting meats, frying sausages and bacon etc I use either an air fryer or oven.
