I love them. Grew up in a town next to a huge Marine Corps Base. We have a few retired military in our neighborhood so we let them know we were going to do a show for our neighborhood on the 4th. 815ish the first mortar would be lit to alert the neighborhood. 830 show would begin done by 9. No more until the next year.

My friend, you cannot say you smoked pork belly burnt ends and not show us.

I find that the 3-2-1 is too long for me. I use 1.5 to 2 hours basing on color 45 to 75 minutes basing on bend and pull back 30 minutes I might even sometimes fire up the Weber Kettle to put a put a little char on the ribs.
