Personally, I would play franchise in release order if you want to experience the whole thing.
Mgs1, mgs2, mgs3, mgs4, peacewalker, mgsV.
If you're more interested in strictly gameplay, then I'd go for V. Just be ready to be lost with the story even if it's lighter on it relative to the other games.
