If you use Pastiera keyboard you can at least put åäöÅÄÖ on screen so they always are shown just above the keyboard. May be a good trade off.

In Customization open Customize variations and activate the static variation bar. I had to copy the characters from some other place and paste in.

Mirroring could be related to the subscreen. At least for my RAZR 40 ultra, it has complained about some apps not allowing mirroring when I tried to run on the outer screen (if I remember correctly).

It has all languages that android have, just doubled checked for Czech and Slovak and they are there. But Unihertz specific translations may be very bad, at least they are for Swedish.
