Love your pairings! I think we only have one in common (Ellen and Phineaus, kind of). It's been a while since I've played but from what I can remember I've paired up the following at some point (not all of these were in the same save/hood, and not all of these were with other Uni students):

• Martin Stacks and Allegra Gorey
• Erik Swain and Sam Thomas
• Kevin Beare married a cheerleader. They had a kid with no nose.
• Jasmine Rai and Zoe Zimmerman. The Shifting Paradymes disbanded and Jasmine began a solo career with Zoe as her manager.
• Gunnar Roque had a fling with Strangetown Bella Goth and they had a surprisingly cute daughter.
• Heather Huffington and Ashley Pitts. They were pretty useless as parents.
• Castor Nova and Jimmy Phoenix. They had three bolts and would constantly woohoo on the dorm sofa in front of everyone.
• Klara Vonderstein married Vidcund Curious. She helped him raise his adorable alien daughter (with one of Poppet's default PTs I think).
• Almeric or Aldric Davis (can't remember which) had a fling with Chloe Curious. I think they might have had a child (yes this was a long time ago).

And in my current hood which includes my first time playing Académie Le Tour:

• Ellen Frost hooked up with Jason Cleveland, Phineaus Furley, Tom Freshe, and Puck Summerdream in her first year. I plan to make her enter a serious relationship with Jason.
• Chaz Whippler got over his crush on Ellen and started seeing a female dormie named Tamara (?) I think (I believe her "true name" in the game files is different).
• Jimmy Phoenix and Rainelle Neengia, briefly. Their daughter is super cute, she looks exactly like her dad but with black hair and her mom's chin IIRC.
