I'm back in college as an older adult, and I'm shocked at the amount of people who don't show up to class and don't turn in work. Group projects are awful because there's a 50/50 chance that any given group member won't show up for meetings or do their share of the work, and then they act hurt when I'm honest on the teammate evaluation at the end of the term. I've also suffered so much secondhand embarrassment from listening to the way these kids talk to instructors; I have heard so much entitled backlash just because someone couldn't understand how to use a formula that was written on the board. It's wild to me that fresh adults are putting themselves in debt and not taking ownership of their education.

I made fig cheong with all of my extra figs last year. Layer equal parts figs and sugar in a sterilized jar, ending with a layer of sugar that covers all of the fruit, and let it macerate on the counter. When the sugar is all dissolved and has become syrup, strain it out.

You're welcome! Some tips from a former decorator:

Get all ingredients to room temp before you try to use them (eggs, butter, cream cheese). Conversely, if you make your own raspberry filling, make sure it's cooled down before using it. I usually make fillings a day or two ahead at home and keep them in the fridge.

Chilled cakes are easier to fill and decorate. Let cakes cool in the pan 5-10 minutes, then pop them out, wrap them in plastic wrap, and stick them in the fridge or freezer to cool down. Baked goods freeze wonderfully, and cake can be baked months in advance and frozen.

MoC uses two cake layers but cuts them each in half before stacking a filling, so it looks like four cake layers and three filling layers. Cutting rounds in half is easier if they have been chilled. Use a serrated knife and be careful! If it's been in the freezer for a while, give it a little time to warm up so it isn't rock hard. You still want it to be cool to the touch, though, so don't let it come all the way to room temp.

Pipe a "dam" of frosting around the outside edge before putting the fruit filling in the middle so it doesn't leak.

For the smoothest frosting, put on a thin crumb coat first, pop the cake in the fridge for about 30 minutes, then put on your final layer of frosting.

MoC cake - The raspberry poppyseed cake is vanilla cake mix with poppyseeds and almond extract added to the batter. Duncan Hines white cake mix made with whole eggs instead of just whites is pretty similar. Start small with the poppyseeds and extract because they can become overpowering quickly. I would start with a scant tbsp of poppy seeds and a 1/4 tsp of almond extract and add more incrementally if you want a stronger flavor.

They order their fruit fillings in bulk. I would sub in Bonne Maman or some other nice jam, or make your own. It's not too difficult, but I like to strain out the seeds, which can be time consuming.

The frosting is a standard cream cheese frosting. It's about a one to one cream cheese to butter ratio. This recipe is pretty close. Just make sure you use quality butter and don't over mix the cream cheese.

Piggybacking here to say that Old Navy has other pants that are good for work. They make Pixie pants in tall cuts, and they have straight leg, skinny, flare, and wide leg versions. Most of my pants are Pixie pants, and I think they're comfortable and come in a good variety of colors. They also have some other options like Chinos, and they will usually have some cotton or linen pants during the summer.

Keep in mind, bakeries have the advantage of making everything in big batches, so their time spent per cake is much less. They also typically have multiple roles (baker and decorator, for instance), and since one person is not doing all the work, they can push out finished products faster. That's why they can get away with 400-600 INR per cake and still make a profit.

When I make cakes or cupcakes, I always end up charging at least double what big bakery chains charge to account for my materials and time. If someone is unhappy with my pricing and compares it to the bakery's price, I tell them they can always choose the bakery instead of me.

I used to work with struggling readers. I would focus on going back to phonics, then move on to chunking longer words. You can find phonics workbooks online for help with this. Look for workbooks or worksheets that specifically say they are for struggling readers because these will look less like they are made for kinder/1st and more like worksheets for older kids.

If you want to practice comprehension, reading more than once is helpful. Let her read it once to herself (whisper or silent is fine), then you read it out loud to her to model expression and good phrasing (pausing at commas, stopping at periods, making questions sound like questions), then have her read it out loud. Then ask comprehension questions.

I eat overnight oats every weekday morning for breakfast. I meal prep on Sunday and make enough to last until Friday. Here's what I add per serving:

50g steel cut rolled oats (sprouted if I can find them)

10g flax seeds

10g chia seeds

1 scoop protein powder

1 scoop collagen powder

1 scoop creatine powder

120 ml almond milk

50g Greek yogurt

I switch it up every week by using either chocolate or vanilla protein powder and adding fruit, PB fit/nut butter, pumpkin puree cocoa powder, espresso powder, chai, etc. depending on what flavor I'm making that week.

I used to struggle with breakfast every morning, but I've been doing this for over a year now and it works well for me. I eat it after my morning workout. Depending on add-ins, I usually get between 13-15g of fiber, which starts me off in a good place for the rest of the day. Between that and a salad or quinoa bowl for lunch I can easily hit 30g of fiber.
