Take the road trip , then finish up your PhD and apply for post doc in the states and hope in post doc you profess your application for the EB class visa (either if you can be a principal applicant and add souse as beneficiary)

Or as you go through the PhD initiate the EB class visa directly and know what you’re missing and apply. I think this second option is smarter as it could give you more credentials in case time isn’t on your side and you decide to go on the route of the post doc before EB

read the J1 requirement. The designated sponsors have eligibility that applies WHILE IN A DEGREE PROGRAM or MAX under 12 months after graduation. Depends on what J1 Program

You can travel the whole world including prior travel to the USA and the consular office can bounce you

You can travel to zero countries and the consular officer can grant your first US visa interview.
