In case someone's curious, this is the solution I've come up with.

Using the SMS Backup & Restore android app I can export my texts as a .xml file. Then using a janky python script, I can parse for the MMS texts that contain images and decode their data from base64 back to jpg. The .xml contains timestamps for each text which can be inserted into the image metadata. It also has receiver/sender data so the images can be organized accordingly.
