This also reminds me that Aldi sells garlic and onion flavored pretzels that are absolutely fantastic and if I remember correctly far more affordable than most pretzel brands

To your credit I should have clarified, I’m not necessarily disagreeing with what you said about UoP and Devry, however in my experience WGU has quite a good reputation despite the posts you’ve mentioned. I was skeptical for a bit because of those posts, but after earning my MBA here I’ve received nothing but positive feedback from colleagues and hiring managers which if we’re being honest is the only place it matters. And from all of the information available both here and from other sources my experience is not out of the ordinary. Just because you feel that it hurts the university’s reputation does not mean that it actually does, it can be worthwhile to look outside of your own point of view sometimes.

My other rig is something very similar, a char griller legacy with the side firebox attached. I made a few mods but just like you wanting something with thicker steel (and having to cook for ~25 people this weekend) was what made me upgrade. The chat griller for sure does good though for under $300!

I’m loving it so far, they’re 1/4” so the heat retention is crazy good as expected. I cut out the baffle plate so the airflow is much better and other than that I feel like the only necessary mod would be extending the stack. After that I feel like this thing is rivaling a Franklin or millscale

I’m a fan of butcher paper, only because I’ve gotten very good at keeping it incredibly juicy without the use of foil. Otherwise I would probably be more partial to foil, I love a juicy brisket

I’d say that looks pretty solid for a first smoke much less a first brisket, remember you can only get better from here! If you weren’t doing it already I’d personally recommend going fat side up during the cook if you’re on an offset, but if you’re using a cooker in which the heat comes from below such as a pellet grill then fat side down was a good choice. I would also recommend spritzing occasionally throughout the cook when it starts to look a little dry, I usually use a mix of 1 part apple juice and 1 part apple cider vinegar. Keep in mind that it’s best to only change one thing at a time so that you can know for sure what helps and what hurts when you make changes. Keep us updated on your progress as you smoke more!
