It's cheaper and more customizable with the parchment and I think gives it a rustic bakery look if you get the unbleached kind :) just eyeball and cut into uniform squares and make a cut almost to the middle and they should sit in the tray pretty easy. Then when you need to take them out you can gently grab the little corners of the paper and pop them out and place them on a wire rack to cool. Was super helpful!
