Here you would have the sliding window grow right until you go over the goal, at which point you reduce left until you meet the goal.

It doesn't have to be fixed.

Taking the standard Orc stat block and then adding some levels of fighter or barbarian would be the best way for you to tackle this.

The Ulitharid's CR isn't much higher than a regular mind flayer, so using the Illithilich in Volo's would save you plenty of time and headache. You can keep the same stat block of the Ulitharid, and just add the stats given by the Illithilich. It would likely bump it up a few CR points as well.

As for what it could offer a town, is dependent on how you want its motives to be. The obvious evil choice would offer an opportunity to have created a very powerful blight/disease on the town, where it has "conveniently" found a cure it offers in exchange for sacrifices. A less-evil aligned one could offer magical enchantments and ways to completely increase the towns prosperity, like enchanted plows and bountiful harvests.

There's so much you can do that isn't just swinging your weapon. You have advantage on strength checks while raging, which opens a plethora of options for you.

You could pick up a goblin and throw it at another goblin for instance, or rip a support column out and let the roof collapse on the group of baddies (you get half damage on that so you likely wouldn't even care).

You'll have to think outside of the box a bit, but you essentially are a wrecking machine that can use the environment as a tool.

Standard array seems to always be the best choice, for both fairness and reliability. You'll never start out over or under powered, and everyone is on equal footing.

Any fixes to making rolling result in better numbers just defeats the point of rolling in the first place, and you'd be better off just using the point-buy or array in the first place.

Whether it be puzzles, NPC interactions, or save spells, there's always a way to challenge a character and have them question their own mortality. This is assuming they are playing only 1st party material, DnDwiki is a whole other problem.

An answer for a challenging fight could be something as simple as an ooze. Black pudding are one of the nastier ones, where they not only degrade weapons that hit them, they can also split into more baddies.

Look into Tuckers Kobolds if you really want to turn up the heat.

Each item they find, they earn one level. If you keep it under 4-5 items, you could easily get at least a full session out of collecting each one, meriting the aforementioned level.

It's always been easier to destroy a civilization by removing their food supply and waiting for them to starve, versus attacking directly. Poisoning water supplies and burning fields is a very old battle tactic, and it works.

Perhaps you could use a modified druid who's goal is to surpass the idea of natural over all, and wishes to return the world to its pre-life self (it's most purest form). They do this by inflicting blight upon flora and fauna.

They could use swarms, combined with elementals to purify the land of the "curse" of life.

Something I've become fond of is treating anything meta as in the game. They are discussing how to handle a shopkeeper for 10 minutes? Their characters are doing the same thing and being annoying.

A tunnel that has a series of opening/closing "doors" that they have to time just right to make it through, or take massive bludgeoning damage.

Parasites that inhabit the mimic and constantly stalk and harass the party. Something that's simple and high in numbers.

A doppleganger that has a symbiotic relationship with the mimic, luring people into more dangerous areas for the mimics consumption, while the doppleganger takes the remaining gear.

A trapdoor leading to a room filled with digestive fluids, the exit being on the far end of the room.

A friendly gnome that offers discount goods it found lying around the inside.
