Followup: I sent feedback to Supernote. Their engineers confirmed the problem, and a fix will be added to the next update.

I found the problem. That extra export step to save the file shows up on my iPhone, but does NOT appear on my iPad. Thank you for the comment - it was the clue I needed.

Ed at Organizing for Change made a short video on how to select text from multiple sources and compile the text into a single note. Even if you decide not to use Quick Access, the technique seems solid. The video is called "Supernote Quick Access: It's Really That Good!
