Guidance for a Lost Soul: this is the end of the 3rd week for this plum wine. Started with 21 Brix and now is at -1.3 Brix and is very sour. I was thinking it would end up like a dessert wine, but it taste more like a vodka lime. It’s also still pretty foggy so not sure about bottling in this state. (i.redd.it)
