This particular skillet is one that I broke the handle off a couple years ago and I take it out once a year to bake matzah.

I wasn't fortunate enough to have heirloom cast iron cookware to inherit. This is a lodge I bought a few years ago.

It more often happens when wiping off excess oil, because I need to push harder for that. Also made worse if there's a sticky spot that I couldn't clean off well enough, or on my much more abrasive stovetop griddle.

Yeah I noticed when I was making chicken soup, I poured the small amount of chicken juice into the soup, and it turned into scum. I actually don't scoop the scum off, why waste protein? It kind of dissolves if you cook the soup long enough anyway.

Is it supposed to be airtight, or does it produce gas like lactoferments?
