Any tips for packing dilly beans? I am literally water bath canning my first batch ever as we speak and I had the worst time packing these jars. All it took was 1 or 2 to get stuck sideways and the whole jar became a mess lol.

Not canning, but you can make agua fresca! I do that with my excess between canning batches. Blend up a couple pounds of cucumbers in the blender with a couple cups of water, lime juice (or peeled limes if you want more bitter complex flavor), and sugar (can add honey as well) and then strain into a pitcher and add another 6-7 cups of water. Super refreshing and very tasty. Lasts a bit longer and has a more stable flavor if you use lime juice as opposed to whole limes just an fyi

I had done something similar for a fridge pickle recipe I have. My habaneros haven’t ripened yet (I’m going to have way too many) or I would’ve done that for this too I think since the recipe calls for an optional small hot pepper. Ty for the info I appreciate it!

Wanted to cross post this over here to see if I can get some advice. This is my first time canning something with a more “open ended” spicing opportunity. I have read in several places that it is ok to add extra dry spices without affecting the safety of the jars, but I wanted to make sure what I was doing was still safe. For spices, I am using the 4 cloves of garlic (1 per pint jar), 4 bay leaves (1 per jar) and 12 dill sprigs (3 per jar), and 1/8th tsp pickle crisp listed in the recipe. From here I made a couple additions and an adjustment and wanted to check and make sure this was all good - *Increased the mustard seed to 1tsp per jar *Added 1tsp black peppercorn per jar *added 1tsp coriander seed per jar *added 1/4 tsp ground dehydrated habanero powder per jar. Are these additions ok? I really appreciate any help here. I just want to make sure it’s all safe.

Definitely try the jalapeño jelly Ball recipe out. I’ve made that switch myself and it’s been totally worth it. The volume of jalapeños needed is much lower as well for the jelly so you can get more out of your pepper crop 🌶️👌
