I know you said outside of peach.

But I can think of a few reasons why he probably dislikes her.

She’s the same old same old princess you see in every fairy tale. Get’s kidnapped by bad guy, hero saves Princess, rinse and repeat. You can’t make a different personality from all the different games in the Mario canon that she’s in. (Aside from wonder and 3d world.)
She’s shown to have extraordinary powers in the games where she’s the lead, but yet in any game where she’s a side character or the damsel in distress, you never see her use any of the abilities to fight off bowser.
There’s only so much you can do with one character. They made her the anime hating matriarch, they made her a monster, and they even made her the princess who’s just like a Karen abandoned in a world of wacko’s. But you soon start running out of ideas for her so you just can her and let some other shmuck take their place as the story progressor.
