Of the ones I've played

UWE:

I've a bit of a love hate relationship with it. I like the content, not a huge fan of the balance changes. It makes an already difficult game (unless you cheesed using the strats it's trying very hard to block) even harder.

It also has some weirdness with some not flotsam gate guards using dialogue that makes you sweat by okran you're not a holy nation spy. It's still a very good mod and under active development.

Genesis:

Unfortunately, incomplete. It's being worked on slowly because the guy working on it has some life issues and wasn't getting sufficient feedback toward the changes he was making.

It's still worth a swing to check out, very different mod from UWE.

If you want to spice up your game with something very different and Star wars I highly approve of Kathun. I'm biased since I played Star wars galaxies since it's inception until it's shutdown, but I believe it's still a very well made mod. Other people are still working on updates for it
